GLUTEN FREE BACON AND PICO DE GALLO PIZZA ON WHITE SAUCE
We are continuing our tradition of strange pizzas by introducing the Bacon, alfredo, pico de gallo pizza. Or pico de bacon, or bacon + tomatoes (and friends) on white sauce. Whatever you want to call it, it is delicious and unique.
INGREDIENTS:
Panetto gluten free crust
Bacon
Mozzarella cheese
Pico de gallo (store bought or your own recipe, just make sure there are tomatoes and onions)
Butter
Cream cheese, gournay cheese, or any other soft cheese.
Garlic
Cheddar cheese (optional)
We’ll start by making the white sauce with one tablespoon of butter

After it has melted, add a healthy amount of your cream cheese

Next, add your secondary cheese. If you don’t have the bourskin gournay shallot and cheese variety that we used, just add some more cream cheese. A garlic or onion flavor would be ideal

Once that has melted and been swished around a little, add some minced garlic.

Looks good! time to add it to the pizza crust.

Spread the sauce to the outside of the crust and place some chopped bacon pieces on the pizza (we’re going to use more later).

Throw some cheese on top! (We used Tillamook farmstyle thick cut mozzarella) and then put some more bacon on (we used the smaller pieces) and then put some more cheese (we used shredded whole milk mozzarella) then put some cheddar on just for kicks!

STEP 4: Pico
Throw that pico de gallo on!
Place directly on center rack (or on pizza screen) for 10-15 minutes at 425 degrees.
